Uji Daya Terima Aneka Frozen Food Berbahan Dasar Tempe sebagai Alternative PMT Balita

Indonesia merupakan negara produsen tempe terbesar di dunia dan menjadi pasar kedelai Asia, sebanyak 50% dari konsumsi dalam bentuk tempe. Protein yang terdapat tergolong mudah dicerna. Frozen Food dapat solusi memperpanjang umur simpan daya tahan suatu produk menyebabkan makanan awet tidak membusuk. Tujuan penelitian ini adalah untuk mengetahui terima frozen food sebagai alternatif tambahan balita upaya pencegahan stunting. Penelitian eksperimental menggunakan RAL (Rancangan Acak Lengkap) dengan satu kontrol 3 perlakuan, 30%, 70%. Selanjutnya dilakukan uji hedonik pada masing proksimat paling disukai kadar karbohidrat,kadar protein, lemak, air abu. Hasil menunjukkan bahwa perlakuan segi warna, aroma, rasa, tekstur bakso penambahan (P2), sedangkan kelompok nugget bola-bola, banyak panelis 70% (P3). Kruskall Wallis memberikan pengaruh nyata tingkat kesukaan terhadap tempe, maupun bola-bola Kandungan zat gizi (Karbohidrat, abu) dihasilkan telah memenuhi SNI 01-3818- 1995, kandungan 01-6683-2002.
